Had to choose between frozen chicken thighs and a can of chickpeas last night
I got home starving at 8pm with literally nothing planned. Opened the freezer and saw some frozen chicken thighs but they needed like 40 mins to thaw. Then I spotted a can of chickpeas in the pantry. I went with the chickpeas, tossed them in a pan with garlic and leftover tomato paste, ate it over rice in 15 mins total. Has anyone else picked the pantry option over meat and regretted it or been pleasantly surprised?

okay so here's something nobody's talking about. that can of chickpeas probably has way more fiber than the chicken thighs would've, so you're gonna feel fuller longer and it's better for your digestion too. your gut microbiome is secretly the real winner here.

60 grams of protein from chicken is way more satiating than any amount of fiber from beans for most people. You’d have to eat like three cans of chickpeas to match the protein content of a small chicken thigh. Plus some people's guts just get bloated and gassy from all that fiber anyway.
