Unpopular opinion: planned leftovers beat random foraging every time
Idk, maybe it's just me but I used to love the chaos of throwing random stuff together on a Wednesday night. I'd come home with half an onion, some sad baby carrots, and a jar of pasta sauce from 2 months ago. But about 6 months ago I started purposefully cooking double portions on Sunday. Like last week I made extra roasted chicken and quinoa on purpose so Monday's lunch was already sorted. The weird combos are still fun sometimes but having a solid base saves me from eating crackers and hot sauce at 9pm. Has anyone else switched from full chaos to like... planned chaos?
Wait, you don't shred it right after cooking? That's wild to me! The second it's cool enough to handle, I pull all the meat off the bone and break it into pieces with two forks. Then I drizzle a little leftover sauce or broth over it before sealing the container. It stays super moist and mixes right into salads or tacos the next day without that dry, stringy mess.
Does anyone else just leave the chicken whole and slice it cold the next day for sandwiches? I find it stays way juicier than shredding it while hot. @finley_flores28 you might try letting it cool completely in its own juices before you even touch it with a fork. I wrap the whole breast in foil with a splash of broth and stick it in the fridge overnight. Next day it slices clean and doesn't have that dried out texture.
