My grandma's old way with beans versus my instant pot
She used to soak her pinto beans overnight in a big clay pot, then cook them for hours with a piece of pork hock. I got an instant pot a couple years ago and just do them from dry in under an hour. It's faster, but the flavor isn't as deep and rich as I remember from her kitchen in El Paso. Has anyone found a middle ground that keeps some of that old taste without taking all day?

Nah, you're just not using the instant pot right. That thing can make beans just as good if you brown some pork really well first and use homemade stock instead of water. My abuela's recipe takes all day but my pressure cooker version fools everyone at the cookout.

Wish I had lily394's confidence in the kitchen. My last attempt at beans in the pressure cooker turned out so bad my dog gave me a look of pure pity. I'm starting to think my tio's clay pot has some magic mine just doesn't. Maybe the secret ingredient is the patience I definitely don't have.
