Thought fermenting hot sauce was just a trend until I tried it

I was pretty skeptical when my buddy kept going on about his homemade fermented hot sauce last summer. Figured it was just another hipster thing, you know? But then he gave me a bottle of his jalapeno garlic stuff he'd let sit for 3 weeks, and wow, the flavor was so much deeper and funkier than any store bought Tabasco. I ended up making my own batch with some habaneros from my garden and it turned out amazing. Has anyone else been surprised by how easy it actually is?

Started my first batch of jalapeno garlic last month and it's already way better than anything I've bought. Just make sure you weigh everything down under the brine so nothing floats to the top, that's the only part I messed up on my first try.
