Spent $90 on a fancy pH meter for my ferments, total game changer or a waste of cash?
I got the Apera PH60 about six months ago because I was tired of guessing if my hot sauce ferments were safe. It was around ninety bucks. On one hand, it gave me real peace of mind and I haven't had a single batch go moldy since. On the other hand, it feels like overkill because my cheap litmus strips worked fine before, and now I have to calibrate this thing and keep it clean. For those of you who do a lot of veggie ferments, is a digital meter actually worth the investment or am I just being extra?

Cheap gear costs more later" is a solid point @jana_henderson52, but sometimes the expensive stuff just makes you feel like a scientist in your own kitchen for no real reason. A little extra gear never hurt anyone, but it's easy to go overboard if you're just making a batch of kraut every few months.
