My uncle in Boone has been making kraut in a crock for forty years, never once used an airlock. Just a plate and a rock. His stuff turns out fine every time. People get way too hung up on gear and perfect conditions. It's cabbage and salt, not a science experiment. That kraut wants to ferment with or without your fancy gadget.
