Spent 3 hours trying to get the collar on a linen shirt to lay flat... just to realize the interfacing was cut wrong.

Feel your pain, that's the worst. All that work for a bad piece of stiff fabric.

Ugh, that is the absolute worst feeling, @faithb78. I had a jacket turn into a cardboard box once. What finally worked for me was washing it a bunch of times with some white vinegar in the rinse cycle. It helps break down that weird stiffness without hurting the fabric. I just use the cheap stuff from the grocery store. It took like three or four washes, but it did finally soften up enough to be wearable.

Totally seconding the vinegar trick @faithb78, saved a stiff denim jacket for me too.
