Pro tip: My $30 cast iron skillet saved my family's cornbread recipe.

I almost burned a batch using a cheap non-stick pan, but the cast iron gave it that perfect crispy crust my grandma always got. Anyone have a good skillet trick for keeping cornbread from sticking?

Honestly, is it that deep? My cheap pan works fine if I just heat it right. Even nina_sullivan61's bacon grease trick seems like extra work for a side dish.

Try a thin layer of bacon grease first.

I mean, ruby561 has a point about it being a side dish, but that bacon grease trick is a game changer. It's not even extra work if you save your grease in a jar like a normal person. Maybe it's just me but a cheap pan with bacon fat beats an expensive one without it any day. The flavor it adds is the whole reason I even make the side dish in the first place. Honestly, skipping that step is like making toast without butter, what's even the point?
