My grandma's arroz con pollo recipe used to call for a full cup of oil, but I cut it to a quarter cup now.

Honestly, she cooked for a farm crew in the 70s, but I just don't need that much grease for my family of four. Anyone else tweak an old recipe to be a bit lighter?

Totally get that. My abuela's tamale recipe was the same. Swapped lard for vegetable broth in the masa. Still tastes amazing. Even my tios didn't notice the difference last Christmas. Sometimes you just gotta make it work for your own kitchen.

How much broth did you use per cup of masa? I tried that once but mine came out a bit dry.

Honestly the "make it work for your own kitchen" line hit me. I was such a purist about using lard for years, thought anything else was wrong. But my doctor told me to cut back last year, so I tried the broth swap for my birthday tamales. Couldn't believe how good they still were, the texture was spot on. Changed my whole view on sticking to the "right" way.
