My aunt in Phoenix said her secret ingredient for chili is a square of dark chocolate
I tried it in my usual recipe and it added this amazing depth without being sweet. Anyone have other surprising 'secret' ingredients for savory dishes?

Oh man, that's a great one. I put a little instant coffee in my beef stew for the same kind of deep flavor. Works every time.

Oh totally, I read something about that once. It said bitter things can kind of cut through all the rich, fatty flavors in savory food and make them stand out more. Like, it doesn't just add its own taste, it wakes up your whole mouth. So a tiny bit of dark chocolate in chili or coffee in a rub makes the meat taste meatier. I mean, it sounds weird but it really works.
