The $2 salt shaker trick I picked up at a diner in Ohio

Stopped at this little diner outside Columbus last week and their coffee was surprisingly smooth for a $1.50 refill spot. I asked the owner what they did and she pointed to a shaker of cinnamon mixed with a pinch of salt on the counter. She said the salt cuts the bitterness from cheap beans without adding flavor, just rounds it out. Tried it at home with my usual grocery store grind and honestly, it's like a whole different cup. I put about a quarter teaspoon of salt per 12 oz of grounds now, not in the cup itself. Has anyone else messed around with salt ratios or is it just a diner secret?
