My dad's hack for fixing bitter coffee was to add a pinch of baking soda
I've been drinking this cheap store brand medium roast for years and it always came out bitter no matter what I did. My dad swung by last weekend, took one sip of my morning cup, and told me to put a tiny pinch of baking soda right into the grounds before brewing. I laughed at him because it sounded like some weird science experiment. But I tried it the next day with just a small pinch mixed into the filter with the coffee, and the bitterness was basically gone. It didn't make it taste like soda or anything, it just smoothed out the harsh edge. I still think it's a little strange but it works for my setup. Has anyone else tried this or got another weird kitchen ingredient that saved their coffee?

Totally done that. Salt works too for smoothing bitter coffee.

Salt really does help. I was skeptical at first but it works way better than adding sugar.
