Tossed up between tacos and stir fry tonight, went with tacos

Had about 20 minutes to cook after work and couldn't decide between ground beef tacos or a quick veggie stir fry with rice. I grabbed the taco seasoning because it was sitting right there in the cabinet. Threw together some seasoned beef, shredded lettuce, and cheddar, used up leftover tortillas from last week. Honestly, it came out fine but the stir fry would have been faster since I wouldn't have had to brown the meat. Anyone else get stuck on easy weeknight choices like this?

Whoa hold up you keep THREE kinds of ground beef in your freezer? That feels like you're running a mini butcher shop out of your kitchen. I mean I get having one pack of 80/20 for burgers but three different blends for different occasions is wild dedication. Do you label them with stickers or just remember by feel when you grab them? Next level meal prep right there and I'm honestly a little impressed and a little intimidated.

I keep three kinds of ground beef in my freezer for nights like that, the 85/15 blend browns the fastest so I grab that one. Taco seasoning is a solid call though because it hides any minor mistakes in the meat texture. I used to make stir fry all the time until I realized I was spending 10 extra minutes chopping veggies anyway. Ground beef tacos take me exactly 14 minutes from fridge to plate if I shred the lettuce while the meat cooks.
1
