Switched to cast iron after years of hating it...
I used to think cast iron was a pain. All that seasoning talk and worrying about rust just seemed like extra work for no payoff. Then my nonstick pan started flaking after 6 months and I got fed up buying new ones. Borrowed my neighbor's 12 inch Lodge for a week and now I get why people swear by them. Anyone else have a kitchen tool they avoided forever and finally caved on?

Hear me out but I still think cast iron is overhyped for everyday cooking. It's heavy, takes forever to heat up, and you can't just scrub it with soap if you mess up. I get the appeal for searing steak or baking cornbread but for scrambled eggs or a quick stir fry? Give me a good nonstick pan any day. The trick is just spending a little more on a decent one and not abusing it with high heat. I've had the same Teflon pan for three years now and it's still going strong, no flaking. Cast iron is a tool for certain jobs, not a replacement for everything.

Oh, that's exactly how I felt about my slow cooker. I thought they were a waste of counter space until my daughter gave me one for Christmas. Now I use it at least twice a week, especially for pot roast or beans. Shame on me for holding out so long.
