Is it better to prep veggies the night before or chop them fresh right before cooking?
I swear fresh chopped onions and peppers taste brighter in my stir fry, but my neighbor insists prepping everything 12 hours ahead saves time and tastes the same and now I'm questioning my whole dinner routine because I spent 20 minutes crying over onions tonight, what side do you fall on for a Tuesday meal?

Your neighbor must have a magic refrigerator or something because I've done the taste test side by side and pre-chopped veggies lose that crunch and brightness every single time. I prepped bell peppers and onions on a Sunday night for Monday tacos and the peppers were all limp and sad by the next day, like they got watered down in their own juice. The onions also started getting that weird sharp smell that just isn't pleasant. I know it takes longer to chop fresh but that five minutes of extra effort changes the whole meal for me. Plus once you get used to it you can chop faster than your microwave takes to heat up leftovers. Save the prep for weekend meal preps if you really want to, but Tuesdays deserve fresh veggies.

Wait, is it possible you're not storing them right, @sarahhart? I heard if you wrap chopped veggies in a dry paper towel inside an airtight container, it soaks up that extra moisture and keeps them crispy. I did that with a big batch of diced bell peppers for a party once and they were still pretty crunchy three days later. I mean, yeah, nothing beats fresh chopping, but for some people that five minutes is a total deal breaker after a long day.
