Found a wild stat about how much salt we're actually supposed to use vs what I dump in
So I was reading this article from Cook's Illustrated last week while waiting for my pork chops to rest, and they said something wild - most recipes call for way less salt than you actually need for proper seasoning. Like up to 40% less in some cases because they're scared of oversalting. But then you've got the opposite camp, people like my grandma who just eyeballs a handful and somehow never makes anything too salty. Which side are you on - do you follow the recipe's salt amount exactly or do you go rogue and add more?

Buddy of mine swore by the recipe amounts until he had dinner at his Italian neighbor's place. The guy didn't measure anything, just tossed salt in like it was going out of style. The pasta was the best he ever had. Now my friend just dumps in a little extra every time.

Yeah I had the same thing happen with my grandma's chili recipe. She would just throw in handfuls of spices and it always tasted incredible while mine was just okay. Finally I stopped measuring and started tasting as I went, now my chili actually slaps.
