Finally gave in and bought a $30 garlic press after years of mincing by hand
I have been chopping garlic with a knife for maybe 15 years because I thought a press would be a waste of money and a pain to clean. Last week I saw one at the store for $30 and figured I would try it just to prove myself right. First clove went through in about 2 seconds and the cleanup took maybe 10 seconds with the little rubber nub it came with. I was honestly annoyed that it worked so well because now I have to admit I was wrong all this time. The press has a little plastic cover that flips over and pushes out all the leftover bits from the holes. I probably saved 5 minutes of chopping and scrubbing on a single batch of marinara tonight. Has anyone else been stubborn about a kitchen tool and then regretted not buying it sooner?

See this is the thing nobody talks about with garlic. It's not just about saving time. It's about your hands not smelling like garlic for the rest of the night. After mincing with a knife I swear that smell stays in your fingerprints for hours no matter how much you scrub. The press keeps the juice inside the garlic instead of all over your fingers. Plus you never get that one rogue piece of garlic flying across the kitchen when you're trying to chop. I bet you'll notice your cutting board doesn't get all those gross garlic stains anymore either.

Do you ever just smell your hands hours later and still catch a whiff of garlic? I feel your pain, man. I tried the stainless steel soap trick and rubbing my hands on the sink but nothing really kills that smell. That flying garlic piece too, always lands right on the floor or in a random cup. It's like the kitchen laughs at you.
