Swore I would never meal prep on Sundays until I gave it one real shot

I always thought meal prep sounded boring and wasteful. Last Sunday, I had a bunch of random veggies and leftover chicken from Saturday's roast, so I just threw it all into bowls with rice and some sauce from the fridge. It took maybe 45 minutes total, and I ended up with 4 solid lunches for this week. What really convinced me was saving $18 by not buying takeout on Tuesday and Wednesday. Has anyone else found a quick meal prep method that uses whatever you already have in the fridge?

Did you find it actually made the week easier too? I did something similar last week with leftover taco meat and some sad bell peppers, threw it over quinoa and it was surprisingly good. The money savings really add up fast, I noticed I stopped grabbing coffee and a bagel on the way in too. Keep at it, me and my husband found it gets faster the more you just use what's around.
