Rant: Back when I used frozen garlic cubes instead of fresh
I used to keep a bag of frozen minced garlic cubes in the freezer for years. Made a stir fry last week with fresh cloves for the first time and it was night and day difference. Anyone else make the switch and never go back?

Oh I read somewhere that frozen garlic actually loses some of its natural oils which is where the flavor comes from. That makes total sense because fresh garlic just hits different in stir fries!

Right, @betty_reed61, I read the same thing actually. I saw a food science blog that said the ice crystals can rupture the cell walls in the garlic, which lets those flavor oils leak out. So yeah, frozen is fine for a pinch, but it's never gonna give you that same punch in a stir fry fresh garlic does.
