Split screen Overcooked beats online co-op every single time

After 6 weekends of playing Overcooked 2 with my brother over chat, we finally sat on the same couch and finished a level in half the time because you can actually see when someone is about to drop a plate, so why do people keep pushing online modes when the whole point of co-op is yelling at each other face to face?
