Showerthought: the $2,800 grease trap invoice from an Olive Garden in Boise taught me to check the kitchen before I quote
I quoted a restaurant job last month based on a phone call and a photo, and when I showed up the trap was buried under a stack of sheet pans and a broken dolly nobody mentioned. Now I walk the line myself and stick my head under every sink before I give a number, because that one trip cost me a whole Saturday and two helpers. Anybody else got a rule for what you refuse to quote sight unseen?
Man, the buried trap is brutal but I'm more stuck on the "two helpers" part, did you eat the labor on that or did the restaurant cough up extra once they saw the mess? What I really want to know is where you draw the line now. Like, will you still ballpark a number over the phone if they send video, or is it full walkthrough or nothing? Trying to figure out if I'm being too paranoid making everyone send pics before I even say a range.
