My commercial grease trap cleaning schedule was completely backward

I used to run enzyme treatments monthly on a 2,000 gallon unit in a Portland diner, but after a surprise health inspection flagged sludge build-up, I switched to quarterly pump-outs and weekly enzyme doses, and now the inspector has zero complaints, so has anyone else found that more frequent small maintenance beats the big monthly hit?

Weekly enzymes sound like a money pit. Quarterly pump-outs are the standard for a reason. One bad inspection doesn't mean your old schedule was broken. Maybe the inspector was having a bad day. Grease traps are simple physics, not rocket science. You're probably just paying more now for the same result.
