Told my coffee was too sour by a barista in Portland and it wrecked my whole method

I spent like 2 years dialing in my pour over at home thinking I had it perfect. Then I brought a thermos of my brew to a shop in Portland last month and asked the barista for a taste test. She took one sip and said dude your water is way too hot, you're underextracting and leaving all the acidity in there. She showed me her temp gauge and she was pulling at like 195 degrees while I was boiling at 212. I switched to letting my kettle sit for 30 seconds off boil and now I actually taste chocolate and caramel instead of lemon juice. Has anyone else had a random stranger totally rewrite their brew recipe on the spot?

That Seattle barista sounds like the exact kind of person we need more of. I had a coffee shop owner in Denver tell me my water temp was off too. I was boiling the crap out of everything at 212 like you were. Letting it sit for 30 seconds changed my whole world. @xena_rivera63 is totally right, sometimes the pushy ones are the ones who help you the most.

Nah, different strokes for different folks, sour coffee has its own charm.

Tbh that pour over snob totally saved you months of frustration. I had a similar thing happen with a bratty barista in Seattle who made me realize my grind size was way off for my Chemex and it completely changed my morning routine.
