That guy at the roastery told me to skip the bloom phase

I was chatting with some older dude at a local roastery in Portland about my pour over routine. He told me the bloom phase is just hype and to pour straight through instead. I figured what the hell and tried it for a solid two weeks. My coffee got increasingly bitter and muddy no matter what grind I used. Finally went back to blooming for 30 seconds and the difference was night and day. The guy was either pulling my leg or had some weird taste buds. Has anyone else gotten bad advice from someone who seemed legit?
