Shoutout to that tiny coffee cart in Portland that changed my whole morning routine

I was in Portland for a work thing last fall and stopped at this little cart near my hotel. The barista saw me dump sugar into my usual dark roast and asked if I wanted to try it black first. She gave me a small cup of a light roast from Guatemala, and for the first time I actually tasted notes of citrus and chocolate instead of just bitter. Now I always ask for a small sample of a new bean before I add anything. Does anyone else have a go-to shop that completely shifted how they drink their coffee?

My friend Jake used to drown his coffee in cream. He stopped at this place in Austin called Fleet Coffee, and the guy behind the counter just slid a tiny cup of a Kenyan pour-over across the bar. Jake said it tasted like blackberries, not burnt beans. He didn't add a thing. Now he owns a grinder and buys whole beans, which is a whole new level of commitment for that guy.
