My neighbor in Phoenix said he only drinks coffee black now, and it got me thinking

He told me he switched after a trip to Guatemala and now he can actually taste the fruit notes. I've always added milk, but maybe I'm missing something. Do you think adding stuff really covers up the bean's flavor?

Milk is like a sweater for coffee, sometimes you just want the raw flavor.

Adding milk to coffee that's already good is like drowning a good steak in ketchup. Tried some single origin beans from a local roaster here in Portland last year, one had a real blueberry note that was totally gone with even a splash of oat milk. Black coffee forces you to slow down and actually taste what you're drinking. Some coffee is just bitter and needs milk, but the good stuff doesn't. Your neighbor might be onto something.
