My local shop switched to oat milk only, and I'm sticking with dairy
They said it was for sustainability, but after a month of flat lattes, I went back to whole milk for the foam. Anyone else find plant milks just don't steam right?

My local coffee shop tried that last year and went back to dairy after two weeks. The owner said the oat milk just wouldn't hold any foam, no matter what brand or temperature they used.

Wait, what if their steamer just wasn't hot enough? I mean, the good oat milks now have stuff added to make them foam better. Maybe they were using a cheap brand or the wrong kind. My friend's cafe uses Oatly barista edition and it works fine, you just have to get the technique right. Sounds like they gave up too fast.

The barista at my old spot in Seattle said the protein structure in dairy is what creates that lasting microfoam.
