I finally admitted my French press coffee was always bitter because I was using boiling water from the kettle.

After my friend in Seattle pointed out that water just off the boil scorches the grounds, I started waiting a full minute and the difference was like switching from instant to the real thing, so does anyone have a good trick for getting the temp right without a fancy kettle?

Actually that minute wait is a great start but it can still be a bit hot. Boiling is 212, but you really want like 195 to 200 for most coffee. An easy trick is to just pour the water into your empty mug first, swirl it for maybe ten seconds, then pour that into your press. The ceramic cools it down just enough. Works every time without needing a thermometer.
