Accidentally made a better cold brew with old beans from last spring

I grabbed a bag of beans I forgot about in the back of my pantry from March. Threw them in my mason jar for a 24 hour steep not expecting much. The result was actually smoother and less bitter than my usual fresh batch. Anybody else have a happy accident with stale coffee?

I've had good luck using older beans for cold brew too (especially if they were stored in a cool dark cabinet). The muted flavors actually work better for me since I like adding milk and simple syrup anyway.

I gotta push back on the "smoother and less bitter" part because I think what you're actually tasting is just flat, dead coffee. Fresh beans have volatile oils that give you that bright, complex flavor, and after six months in a pantry those oils have basically evaporated. That "smoothness" is really just the absence of any real taste at all. I had a similar experience with old beans once and my roommate called it "brown water with a hint of cardboard" and honestly she wasn't wrong.
