My bootcamp mentor told me to stop copy-pasting code without typing it out, and honestly I'm still mad about how right she was
She said I'd never learn if my fingers never touched the keys, so now I retype every single example by hand even when it's 40 lines of boilerplate, and it's slow and annoying but I actually remember stuff now, anyone else forced themselves to do this or am I just wasting time?

The thing is your mentor was mostly right but not for the reason you think. Its not about your fingers touching keys like some kind of magic trick, its that copying forces you to actually read every line instead of just seeing a blob of text. But retyping 40 lines of boilerplate word for word is kind of a waste honestly, nobody learns anything from typing out a config file for the tenth time. The trick is figuring out which parts are worth the slow treatment and which parts you can just grab and move on. If you can explain what a line does after you paste it, you already learned it, no typing needed.
