Shoutout to the Clearwater health inspector who caught my cooler setup in March
I was running chicken thighs to a 41 degree cooler in my garage on March 14th and the probe read 47 at the surface. Turns out the cheap dial thermometer I trusted for months was off by 6 degrees. I swapped to a $22 digital instant read that same day, started logging temps every two hours, and passed the follow-up with everything holding under 38. Has anyone else had a thermometer lie to them like that, and how often do you check yours against ice water?
