Went to a new farm-to-table spot in Portland last night...
Walked into this place called Root & Stem. Menu looked amazing on paper. Then I saw the line cooks using the same cutting board for raw chicken and herbs. Watched for 10 minutes. No glove changes either. One guy wiped his hands on his apron after touching raw meat. I left before ordering. How hard is basic cross-contamination? Has anyone else noticed this getting worse at trendy spots?

The same cutting board for raw chicken and herbs? That's absolutely disgusting lmao. I would have walked out too, that's like day one stuff in any kitchen. One place near me had a cook who would handle raw meat then just wipe their hands on the apron and go right back to garnishing plates. I can't believe these places charge $40 a plate and can't manage basic food safety lol.

Ever notice how these same people freak out over raw chicken cross-contamination but will eat a medium-rare burger without blinking? Food safety rules seem to go out the window when it's beef on the line.
