Unpopular opinion: I chose a $400 Japanese mandoline over a new set of knives last year.

I was saving for a knife upgrade but got the mandoline for perfect, consistent veg prep instead, and it cut my mise time in half. Anyone else pick a single tool that changed their whole station setup?

Read an article once about how pro kitchens are all about the right tool for the job, not just the fanciest knives. A mandoline for perfect slices makes total sense if you're doing a ton of veg. My knife skills are just okay, so I get wanting that consistency without the practice.
