Honestly, sanding those old boards down is a game changer. You keep all that history but lose the grime and deep cuts, so they're actually safe to use again. A little mineral oil after and it's like meeting an old friend.

Did you ever accidentally carve your initials into one of those old boards while chopping? Because I'm pretty sure my terrible handwriting is permanently etched into my first one, right next to all the knife marks. That thing looked like a map of a really confusing city after a few years. I guess it was just getting broken in, like a good pair of jeans you're scared to wash!

My first board ended up with so many cuts, it was like reading my own cooking diary... each slash was a rushed dinner or a new recipe gone a bit wild. Those accidental initials just added to the charm, like a secret signature on every meal I made. After a while, I stopped seeing flaws and just saw history in the woodgrain... kinda beautiful in its own messed-up way.
