Hot take: I stopped chilling my cookie dough overnight after a disaster at my cousin's wedding in Phoenix
I always swore by the 24 hour rest until my walk-in broke last Tuesday and I had to bake 200 cookies straight from the mixer, and honestly nobody at the reception could tell the difference, so now I'm wondering if the long chill is mostly just habit for anyone else.
