Hit 500 covers solo on a Friday night for the first time last week
I've been running the line for about two years and finally broke that 500 cover mark by myself and I'm still trying to figure out how I didn't drop a single plate or burn out before close anyone else have a number that made them stop and realize they were getting the hang of things?

I mean that's a solid milestone for sure but honestly the thing that stands out to me is that you didn't drop a single plate, that's almost more impressive than the number itself because it shows you've got your pacing down. Most people hit that volume and start scrambling to keep up but if you're holding it together that clean then you're definitely not just getting the hang of it, you're actually running the show.

Yeah for real, keeping your pace steady with that many plates is the real trick. I had to learn the hard way that rushing just makes you drop stuff and waste time fixing mistakes instead of just moving at a comfortable rhythm.

Is it possible you hit 501 covers and just lost count somewhere? I only ask because I used to do the same thing when I was in the weeds and then realize I missed a ticket or two. Getting the hang of things is great, but hitting that number clean without dropping anything is the real sign you know your station inside and out. That takes a lot more than just speed, it means you have good habits built in. You should be proud of that.
