Hit 500 covers on a Saturday night and it broke my brain a little
I've been on the line for about 9 years now, mostly at this brunch spot in Portland. Last weekend we got slammed out of nowhere, 500 covers between 7am and 3pm. That's roughly double our normal Saturday. We ran out of hollandaise by 10:30, had to make two more batches on the fly, and I burned my forearm on the second one. But here's the thing that surprised me: I didn't lose my cool once. In the past, 300 covers would have me yelling at the expo guy. Something just clicked, maybe it's the muscle memory finally kicking in after all these years. Has anyone else had that moment where you hit a number that used to terrify you, and suddenly it's just another shift?
That "broke my brain a little" line really hit home, but not how you'd expect. Maybe the real shift isn't just muscle memory, it's that you finally stopped fighting the chaos and started riding it, which takes a weird kind of acceptance. Once you've seen enough disasters, your brain just goes 'oh, this again' and that calm is scarier than the stress sometimes, idk.
