Heard a line cook say something today that stuck with me

I was grabbing a quick coffee this morning before my shift and overheard this kid, maybe 22, telling his buddy that 'cooking is just following a script, you don't really need to taste anything.' Man, that hit me hard. I've been in kitchens for about 15 years now, started as a dishwasher in a diner in Tucson. I remember my first chef, this old guy named Rico, he'd yell at me if I didn't taste the sauce every single time I added salt. That kid's comment made me realize how much the trade has shifted toward just cranking out plates without really feeling the food. Half the new cooks I train now just glance at a recipe on their phone and go. Has anyone else noticed that the whole culture of tasting and adjusting as you go is fading?

Tasting is still huge in good kitchens you just gotta work with people who actually care about their food.

People who actually care about their food" is the key. Hard to find those kitchens sometimes.

Nah, those kids are missing the whole SOUL of cooking.
