Had a line cook in Chicago tell me he never temped his fish

He said 'it's done when it looks done' while plating halibut for 40 covers. I had to pull him aside right then because that's how you get someone sick. Anyone else had to correct a dangerous habit like that on the fly?

That's a great way to run a seafood special called "halibut roulette." Just eyeballing it for a whole service is how you end up closing early for a real bad reason. Good on you for saying something right away, some people just get way too comfortable. I've seen guys try to pull that with chicken too and it never ends well.

Yeah, halibut roulette is a perfect name for it. Just to be clear though, chicken is way more dangerous to eyeball than fish because of salmonella. Both are bad, but chicken is the one that really gets people sick fast.
