Had a chat with a line cook who started during covid and it shook me
He told me he learned to cook from TikTok and never had to scrub a flat-top with a brick, and I just stood there wondering when we stopped passing down the gritty stuff.

Oh man, I gotta push back a little on the "burning your arm" thing. I mean yeah, you're gonna get some heat from a flat top and maybe a little splash of grease, but a full on arm burn? That's not a guarantee, that's a technique issue. I've been doing burgers on a cast iron for years and the worst I get is a tiny red dot if I'm not careful with the bacon fat. If you're burning your arm twice per burger, you're probably crowding the griddle or using too much oil. It's not a badge of honor, it's a sign you might need to dial back the heat or flip your patties with a little more finesse.
