Found out my 12 inch cast iron only counts as 10 tops and I want to fight whoever decided that
So I was at Restaurant Depot last Tuesday picking up a case of oil and got to talking with this old timer who runs a breakfast spot in Portland. He asked what size my cast iron was, I said 12 inch, and he laughed and said it holds about 10 inches of cooking surface because of the side walls, same as a 10 inch pan does when you actually think about it. I went home and put a ruler on mine at the flat part and he was right, it was right around 10 and a quarter. Here I am thinking I upgraded for years when I really just got heavier iron and the same amount of cooking space. Has anyone else actually measured their pans or am I the only one who got tricked by the label?
