The butcher at Marv's Market talked me into pork belly and I'm still laughing
He spent 15 minutes explaining how to crisp the skin, then winked and said 'if it fails, just call it pulled pork,' and that one line got me through a burnt batch last Tuesday, has anyone else gotten a cooking lesson they didn't ask for at the counter?
My guy at the H Mart meat counter on 32nd did the same thing with oxtail. Told me to skim the fat twice or the whole pot tastes greasy, and he was right. What gets me is these guys never write anything down, so the tips only live in your head until you mess up and remember what they said. That wink line about pulled pork is honestly better advice than half the cookbooks on my shelf.
