The fake it till you make it trick I tried in interviews actually worked
I kept freezing up in interviews when they asked about skills I only half knew... so I started practicing my answers out loud to my bathroom mirror for 10 minutes before each call, and after 3 tries I got an offer from a place in Austin.

Back in 2019 I had a similar thing happen but with a group interview at a restaurant. They asked about handling busy rushes and I straight up lied about working a Friday night dinner service alone. Next thing I know I'm actually working there and the first Friday they put me on the floor solo. Had to learn on the fly while sweating through my shirt. Two years later I was training new hires on the same shift. Mirror trick would have saved me a lot of panic but the on the job version worked well enough.

That "sweating through my shirt" line hits close to home. I once lied to get a job at a diner and ended up having to flip eggs over easy without knowing how to do it. The first old timer who ordered sunny side up watched me mess up three eggs before he just got up and showed me how to do it himself. What is it about jobs where they just throw you in and hope you figure it out? I burned my hand something nasty on the griddle that first week. But you're right, there's no teacher like being in over your head and having to stay afloat.
