My boss at the warehouse insists a pocket hole jig is all you need for cabinet frames, but my old shop teacher swore by mortise and tenon. What's your take?

Depends how much you care if it falls apart on delivery.

Your old shop teacher was right for real furniture. Pocket screws work for quick shop cabinets that won't get moved much.
