Heard a cashier tell someone to freeze their cilantro stems for stock...

I was at the Asian market on Division Street and a cashier told a customer to freeze cilantro stems in a baggie and use them later for broth or curry. I’ve been throwing them away for years, now I feel like an idiot. Anyone else got produce scraps they save now?

Well I'll be. I always thought those stems were just filler and never gave them a second look. A friend of mine told me the same thing a while back and I laughed it off. Figured you needed the leafy parts for any real flavor. But then I tried it with a batch of chicken stock and I'll admit I was wrong. That little bag of stems sitting in the freezer really does add something to the pot. Now I save all my veggie scraps except for things like bell pepper seeds or onion skins if they're too dirty. It's a small change but it makes a difference.

Right? Threw me for a loop too when I first heard it. Now I keep a bag in the freezer for exactly that.
