Warning: I mixed mortar too wet on a job in Fresno and had to tear out 60 blocks

Wet mortar felt easier to spread so I kept adding water, then 2 courses sank half an inch overnight and the next morning the blocks were sliding. Had to knock out 60 of them and start the corner over while the GC watched me. How do you all judge the right mix by feel without a gauge?
