Well, at that rate it'll be perfectly cured just in time for my great-great-grandkids to maybe try it. Honestly, my own projects have a habit of entering that same forever-curing state. You start with big plans and then it just sits in the garage, quietly judging you for years.

Has @jade3's great aunt started that ferment yet or is it still just a concept? I had a buddy who "cured" a pork leg for 3 years and called it an experiment. When he finally cracked it open the thing was basically a science project.
