The greenhouse at the rest stop outside Boise has a cactus growing through the ceiling

Man that's hilarious, I totally get what you mean. Same kind of thing happened at this tiny diner I stopped at once in eastern Oregon where a tree was literally growing through the roof in the corner. They just built the whole dining area around it and called it the "Birch Booth." No sign apologizing or anything though, just a laminated card on the table saying something about the tree being there first. Honestly I kinda respect the chaos of just letting nature do its thing even if it means dealing with drips and needles. Cactony the Ceiling Buster would be the best name for it though, that's gold.

Is the thing just growing wild and nobody cares, or did the rest stop people actually build the ceiling around it at some point? Seems like a maintenance headache either way, especially when that thing starts dripping water or shedding needles. Was there just a sign apologizing for the cactus crash or did they embrace it and name it something like "Cactony the Ceiling Buster"?
