Swapped my stand mixer paddle for a whisk attachment and my bread dough changed completely
Used to always start my bread dough with the paddle like I saw in videos, thinking it mixed better. Then one Monday I forgot to switch attachments and let the whisk run for 5 minutes. The dough came out way smoother, less sticky, and my loaves got taller. Been doing that for 6 weeks now. Anyone else had better luck with a whisk on wet doughs, or is this just a fluke with my particular recipe?

Whisk works because it develops gluten, it doesn't just mix. That's why your dough got smoother, not some fluke with your recipe.
