Shoutout to the lady at the farmers market who saved my sourdough

I was telling her about my flat, dense loaves and she said, 'Your starter is hungry, feed it twice before you bake.' I tried it and my next loaf rose like a dream. Anyone else have a simple tip that fixed a big baking problem?

Oh man, that's so true. A hungry starter makes everything else pointless. It's like trying to drive a car with no gas, you can have the best recipe in the world but it just won't go.

Totally feel that, my last loaf was a brick because I got impatient with my starter. It just sat there like a sad pancake no matter what I did. Now I wait for it to really bubble up before I even think about mixing dough.
